When the moon is full, the Atacama Desert is exquisitely illuminated; and in this light, you can experience its natural splendor from a whole new perspective. This leisurely hike will allow us to marvel at the lunar landscape beneath the silvery glow of the moon, contemplating the silhouettes and shadows found at every taken, appreciating its spectacular geography in an altogether alternative way. After about half an hour of walking through this twilight world, we’ll stop to make a campfire and enjoy a snack here, taking in the pure magic of the Atacama under moonlight.

Biking Adventure in Patagonia
We will bike through Loma Guanaco on the way towards Laguna Azul, in an area that not many tourists visit, making it a very private and quiet spot. Along the way, we hope to see guanacos, which are wild South American camelids that stand at around 2 meters (7 feet) tall and weigh between 90 and 140 kg (200 to 310 lb), making them one of the largest native terrestrial mammals on the continent. Their presence also provides good chances to encounter other local species like foxes, pumas and condors.

Desert Swim in Cejar Lagoon
The Salar de Atacama is the third largest salt flat on the planet. At its heart there are lagoons of high salinity that possess unique and beautiful birdlife, in addition to plants that are extremely salt-tolerant. Dinosaur Valley Desert Horseback Ride
The Atacama Desert has often been described as being a "Martian" landscape, although to catalogue it as paleozoic would also be quite fitting. The terrain seems to have remained untouched for millions of years. While you shouldn't be surprised to fin some historic remains, the Dinosaur Valley owes its name not to fossils, but rather to the peculiar shapes that make up its topography. Alligned for several kilometres, the hills have taken on shapes that are reminiscent of the spikes on a dinosaur's back. This unique landscape allows for fantastic photo opportunities and the chance to for some slightly challenging horseback riding.

El Ñandú Bike Adventure - Iguazu National Park
An adventurous bike ride, crossing the red dirt roads in a lesser- visited area of the National Park. After a 30-minute drive we arrive at the starting point, from where we will travel on rough roads surrounded by jungle. We will reach the banks of the Iguazu River, just behind the Devil’s Throat, possibly being able to appreciate some of its mist in the distance.

Estancia San Luis Horseback Ride in Patagonia
We will get the feeling of what the iconic "baqueanos" experienced, riding on the endless yellow Patagonian steppe. Looking onto the Paine Complex towards the east, and north the imposing Sierra Baguales Range. This excursion has the perfect mixture of traditional culture and surreal sightseeing. We can combine it with excursions in the Sierra Baguales Mountain Range and finish our day with some local "asado" (the traditional gaucho barbacue) in the best scenery and light as the day comes to and end.

Hike to the Altiplano Salt Flats
Situated almost on the border with Argentina are the salt flats of Aguas Calientes and Tuyajto. Both are wrapped in absolute silence, mainly thanks to their low visitor numbers. The Salar de Aguas Calientes has a splendid view of the surrounding volcanoes and reddish waters. The Laguna de Tuyajto is, in contrast, a mirror of salt water, which looks like snow in the dry season.

We will get to admire hundreds of waterfalls from every possible angle., walking right up to the San Martín, Bossetti and Dos Hermanas waterfalls, each set in lush vegetation boasting with birds, butterflies and coatis. We will be awe-inspired by one of the most impressive cascades of the Iguazú Falls, walking right up to its 80-meter (260 feet) drop. On the way, we will get to appreciate the jungle scenery and enjoy bird watching - there are many swifts in the early morning and at sunset before they return to their nests behind the waterfalls.

Gourmet Dinner in the Desert
While the Atacama Desert seems an unlikely to be a source of biodiversity and inspiring new recipes, chef Juan Pablo Mardones has found it to be exactly that. Some local ingredients, like quinoa and papa morada- a gourmet variety of blue-violet potato - are widely known. But many are native to the region and only grow wild; these include edible algarrobo pods from the carob tree, rosa de año - a flower that blossoms in the desert after the annual rainy season, and one of the chef’s staples: the sweet fruit of the Chilean chañar tree. The chañar is a small, thorny tree that grows exclusively in very dry areas, pervading local culture and folklore as a result of its medicinal properties. The chef, however, uses its principally to delight his guests’ taste buds, deriving an intense syrup, with woody tones, from the tree. This serves as a versatile aromatic base, known as “Arrope de chañar”, which features strongly in sweet dishes.

Shabbat Dinner at Mishiguene
Mishiguene, which means ‘crazy’ in Yiddish, honours Argentina’s Jewish immigrant heritage by reinventing Ashkenazi, Sephardic, Israeli and Middle Eastern cooking with Latin American twists. Here, nouvelle techniques are applied to old world recipes, using the highest-quality ingredients possible. Chef Tomás Kalika spent years learning Middle Eastern flavour profiles and many of Mishiguene’s dishes are inspired by personal events in his life, including a Russian-Polish borscht and spit-roasted Moroccan lamb. Paying homage to his culinary roots and traditions, bold photographs of Israeli markets adorn the low-lit dark-wood salon. Every Friday night Mishiguene celebrates Shabbat and the entire restaurant breaks out in song and dance, led by a klezmer band that plays live music.
